It’s almost Thanksgiving! This is my FAVORITE holiday. The stress isn’t there, it is just family, food and fun! All my favorite things!!
As many of you know, I changed my diet back in 2003, I can’t believe it has been that long already! I quit eating animal products because of my health. Recently, I’ve had some more health issues and had to change my diet again. This time I had to add certain animal products BACK into my diet. I wasn’t thrilled about it, but I have to do what is best for MY body. I have to eat an egg every day and I had to add some fish and turkey in there for good measure too. I still try to avoid dairy as much as I can and I am starting to get better, thank goodness! It is working, so I am sticking with it for now. I hope to be able to go back to a vegan diet SOON!
I did find that it was difficult to prepare the Thanksgiving menu without using animal products, but I slowly learned how to do it. Now there are so many WONDERFUL cookbooks out there to help.
