Healthy Thanksgiving Recipes

It’s almost Thanksgiving!  This is my FAVORITE holiday.  The stress isn’t there, it is just family, food and fun!  All my favorite things!!

As many of you know, I changed my diet back in 2003, I can’t believe it has been that long already!  I quit eating animal products because of my health.  Recently, I’ve had some more health issues and had to change my diet again.  This time I had to add certain animal products BACK into my diet.  I wasn’t thrilled about it, but I have to do what is best for MY body.  I have to eat an egg every day and I had to add some fish and turkey in there for good measure too. I still try to avoid dairy as much as I can and  I am starting to get better, thank goodness!  It is working, so I am sticking with it for now.  I hope to be able to go back to a vegan diet SOON!

I did find that it was difficult to prepare the Thanksgiving menu without using animal products, but I slowly learned how to do it.  Now there are so many WONDERFUL cookbooks out there to help.

I was recently offered a chance to share some recipes with you, that will be good for EVERYONE! So, it is my pleasure to do just that!

You Oughta Know!

The big thing on facebook and social media right now is things you didn’t know about me…. So, I’m jumping on the bandwagon and sharing 5 things you may not know about me!  Just what you wanted, right?

1.  I could woof-whistle when I was a baby, actually got my dad slapped by a waitress one time, but now can not whistle at all.

2.  I absolutely HATE horror movies.

3.  I feel naked if my toenails are not painted.

4.  I do not have a crafty bone in my body – WHATSOEVER!  AND I am jealous of people that are!

5.  I try to eat as healthy as possible, but if you put a Ding Dong in front of me, I will eat it and love every minute of it.  I LOVE them.  Brian got me a box of them one year for my birthday and it is still to this day one of my favorite birthday presents.  Probably a good thing they don’t make them anymore!

So there you go, 5 things you probably didn’t know about me!

Burn Bright

I was recently given a copy of Burn Bright by Bethany Frenette to review.  I really enjoyed the book, but it was obvious to me that this had to be part of a series of books.  I just felt like I was lost  and missing out on some pretty important information.

Audrey Whitticomb saved her entire city.

Well, kind of. The superhero Morning Star (who just happens to be Audrey’s mom) might have played a small part, and her sidekick, Leon-Audrey’s sort-of boyfriend, who is gorgeous and frustrating-maybe helped, too.

But after two peaceful months, there is a vicious new threat in Minneapolis. Her name is Susannah, and she’s a Harrower, a demon hell-bent on destroying people like Morning Star, Leon, and Audrey-the Kin. Like others before her, she seeks the Remnant, a Kin girl who has the power to unleash the inhabitants of the Beneath. But to what end?

Audrey already has a ton on her plate: dealing with her best friend Tink’s boy drama, helping her other best friend Gideon figure out his nightmares, and exploring the highs and lows of “dating” Leon. But when she develops a powerful new ability, Audrey seizes on the chance to fight, despite her mother’s protests and Leon’s pleas.

As Audrey gets closer to figuring out Susannah’s motives and tracking down the Remnant, she’ll uncover more than she bargained for. The terrible truth is staring Audrey in the face. But knowing the truth and accepting it are very different things.

I would recommend this book, but I do recommend that you read the first book in the series before starting this one!  Dark Star by Bethany Frenette  I do believe you will enjoy the book much more this way!  If you read it, let me know what YOU think.

I’ll take the money, but I love candy better…

Chase and Meredith have gotten all moved and settled in their new place in Tulsa.  It’s been sad having our family dinners without them, we miss them like crazy, but I have been able to make a couple of trips to Tulsa to see them.

My grandma and my uncle were both in the hospital this last week.  Both of them had unrelated strokes and luckily were in the same hospital in Tulsa.  I was able to get up there and see them, spend some time with them and they are recovering quite nicely.  It’s always stressful when you have a loved one that is ill and in the hospital.  Please say a prayer for their recovery, I’d appreciate it.

Halloween was a crazy day, I came home from Tulsa and the hospital visits and got home in time to start handing out candy.  We bought 3 HUGE bags of candy and were completely out by 6:30 PM.  Last year we only had 10 total trick or treaters, but this year was CRAZY!  Brian and I scrambled around and got some quarters together and we handed those out.  Most of the kids were excited to get money, all but one little girl, she was so sad to learn we had run out of candy and she said ” I’ll take the money, but I LOVE candy better…”  I felt so bad.    My sweet trick or treaters were adorable.

Over the weekend, we had a “date” night with friends.  We went to see Last Vegas ( I liked it, it was funny) and had dinner.  It was a good time for sure and much needed down time!

This week will be a busy one with working on a rental house and starting a new workout/healthy eating challenge.  Remember if you want to join in any of my challenges, just let me know and I can get you the details.  I have a private page on facebook and we all support and motivate each other to stick with it.  There is no judgment or ugliness allowed, it is all about helping each other succeed.  There is nothing required to purchase, just follow the challenge each time.  This month is focusing on eating clean, working out and doing a mini-challenge each day.  EASY PEASY, right?  Right!
