FIT CLUB RECIPE:
I made this for dinner on Sunday night and it was sooo good! Just right for these cold days! Add a salad and some cornbread muffins and you have a perfect meal!
1 tbsp olive oil
1 med onion, chopped
2 cloves garlic, chopped
veggies you have on hand: I used zucchini, squash, cauliflower, broccoli, corn and carrots (you can even use frozen if you want)
1 can of crushed tomatoes
1 can of tomato sauce
1 box of veggie broth
salt to taste
you can add any spices you like. I added a little garlic powder, salt, and some parsley!
heat your soup pan and add olive oil, saute onions and garlic until they are almost done, add in your veggie broth, tomato sauce and crushed tomatoes. Bring to a boil and reduce heat. Add in your veggies and salt. Cook until the veggies are done. I like to let it simmer for a while to really get the flavors just right! Enjoy!!
