Not a bad day at all…

I learned a lot of things yesterday…..

This causes difficulty in walking and moving the next day!

Fresh spelt bread causes a very yummy lunch of an avocado/tomato/hummus sammy the next day!

Visiting with a friend at the coffee shop makes you both  feel just a little bit better!

Getting some free jewelry and helping your daughter-in-law with her new business and sharing it with your friends is just fun!

Using my Nerium AD every night makes me look good and younger!

Playing around with your pictures in PicMonkey is just plain fun!  I had been using picnik to edit my photos. They shut down in April and I didn’t know which software to use until I found PicMonkey.  Easy to use and fun at the same time!

Fit Club Tuesday!

It’s Tuesday AGAIN!  Gosh these weeks are just flying by already!

normal routine?

We’ve all had time to recover from Christmas and the stress and fun that goes along that with, so now it is time to settle into our normal routines.

What does your routine look like?  Does your New Year’s Resoultions impact it at all?

My routine has changed up a little:

Morning: 

I make my to-do list, yes I am keeping it on my phone these days.  This way I always have it with me.  LOVE THAT!  My folders are today’s to-do-list, weekly to-do list, push goal, weekly goals and affirmations!

I also did a 20 min speed cleaning, had lunch and went to the grocery store and did my Spanish lesson for the day!  I’m on fiyah with my list 😉

So, in between doing all the wonderfully dull things on my list, I check my email and facebook (I’m a bit addicted!) and if Brian has something fun to do, I’m always game!  We try to eat dinner together most nights and if anyone wants to work out after work, I never pass that chance up!

I try to keep my evenings free to spend time with Brian, but I do have fit club on Tues and calls on Wed nights. 

So a few things have changed since the beginning of the year.  I am really working on being more organized and my to-do list is helping with that. 

Brian is going hunting next week and I think I’ll be re-organizing the office while he’s gone.  Lord knows, it needs it!

Fit Club Tuesday, Bum Bum!!

It’s a snowy fit club Tuesday here.  Schools are closed, roads are slick.  I haven’t decided yet if we will have Fit Club tonight or not. I’m planning on it, but if the roads are bad, I don’t want to take a chance.  So, I’ll be sure to let you all know by email and facebook/twitter.

We are still in Brazil Butt Lift month, so tonight’s workout (if we meet) will be Bum Bum and Tummy Tuck.  I was sore after last week’s workout, so I’m sure I’ll be feeling this one as well!

Baba Ganoush

Team Beachbody Kitchen

2 small eggplants (about 6 to 8 inches long)
3 Tbsp. tahini (sesame paste)
1 lemon
1 clove garlic
1/4 tsp. salt

Broil eggplant until top is blackened. Then rotate 1/4 turn and repeat until all four sides are blackened. Scoop out the insides and discard skin. Juice the lemon. Mince the garlic. Add garlic, lemon juice, tahini, and salt to the eggplant and mix. Water may be added to desired consistency.

girlfriend fun

Yesterday Brian went to the gun show, so I called up the girls and we got together for a day of fun!  We started off with a workout ( a little girlfriend fit club) Brazil Butt Lift’s Cardio Axe (pronounced ah-shay) was a fun way to get going, then we went into the kitchen for a little cooking lesson.  Spaghetti squash was on the menu.  We served it with veggie soup YUM!

Afterward it was a little shopping time!!

Fit Club Recipe:

Tomato Soup

I know that everyone knows HOW to make tomato soup, but this one is my version and it is really tasty and very healthy!

I take my tomatoes (fresh from the garden for the best flavor)  You can use several different varieties if you like

Put them in a pan and almost cover with water to cook tomatoes.

Then after the tomatoes are cooked, put in blender – yes, I use the whole tomato.  I have a vita-mix and it does the job!  You may want to cut the stem off.

Blend until VERY smooth.

Put back in pan and it should look something like this:

Add in your milk ( I use cashew milk and mimic cream)  I forgot to take photos of making the cashew milk.  I’ll have it next week for you!

Add in fresh basil and nutritional yeast and salt to taste

Cook until it just starts to boil.

Ready to eat!  I like to sprinkle with a little more nutritional yeast and chili powder.  Serve with french bread or grilled “cheese”YUM!

Here are my food choices for yesterday.  I probably didn’t have enough calories, but I was so busy and didn’t get any snacks in.

Breakfast was Shakeology (big surprise there 🙂 )

Lunch was the tomato soup with a grilled hummus and cheese sandwich

Dinner was roasted veggies and brown rice with a drizzle of mustard and soy sauce

Just some fun:  My mom called yesterday evening to ask if I liked my package.  I had no idea what she was talking about, told me that a package had been delivered to check the front porch.  I went running to the door, I LOVE packages!!!  She and my dad sent me a KINDLE for my birthday.  They have been backordered forever and it took this long to get it!  I was so excited!!!

I immediately started playing with it and I am going to LOVE this!  Brian thought it was funny that I was hula-hooping and reading at the same time, so he took a photo!!

Fit Club Monday

I am finally home and have my internet back.  As much fun as we had at the lake, I am glad to be home.  I have a busy week ahead and need to get back to my regular workout schedule!  I finished the 5 day Inferno Plan, but I did have a slip up over the weekend, so I plan to re-do day 5 tomorrow!!

Brazil Butt Lift 

I got to workout with Leandro at the Beachbody Summit.  This is not an easy workout, but you will get great results!

Fit Club Recipe:
 
Healthier Fried Rice
 
In a saute pan – 1 tbsp or so of olive oil, add in the veggies you like – ( onion, carrots, bell pepper, broccoli , cauliflower – whatever you have on hand), saute until cooked tender-crisp
 
Add in some tomatoes and pineapple chunks and cook until the tomatoes soften a bit.Add in tofu ( I like to pre-cook mine with a little soy sauce)  Then stir in about 1 cup of cooked brown rice.  Add in 1 cup coconut milk ( you can use light if you want), soy sauce and curry powder to taste. Cook to desired crispness.
 
Add chopped cashews on top to add a little crunch.  Very tasty!
 
If you are a meat-eater, add in chicken or shrimp that is already cooked and scramble in one egg if you want!

totally crazy day

I’ve had a crazy day today. The internet has been down for the majority of the day. Bring in AT&T to save the day….. don’t hold your breath just yet.

The repair guy showed up quicker than I thought he would and he was a very nice man. He told me he was new (uh-oh) and would see if he couldn’t get the problem resolved. He installed a whole house filter, did something outside on the phone box and it seemed to be working. Cut to 30 minutes later…. no internet again. UGH! Luckily, he left me his card and cell number and told me to call if it didn’t work again. So, I did! I think he might’ve been a little surprised to hear from me, but he said ” I knew I would regret not changing out that modem!” So, I now have a new modem. We’ll see if that fixes the problem. I hope so!

Meredith came over in the midst of all the internet fun and we did Brazil Butt Lift Bum Bum workout. It was good and I think we’ll both feel it in the morning. She told me that Leandro ( the workout trainer in the videos) reminded her of Franc from Father of the Bride. Not in the way he looked, but in the way he talked. When he told us to move backwards, Meredith thought he said something about the curves. So, we laughed and sweat through the whole thing! That is always a good thing 🙂

My eating has been odd today. I’ve been hungry all day. I had my pb oatmeal for breakfast, it was yummy sweetened with agave nectar and a splash of almond milk. At 10:00, I was starving again. Leftover pasta primavera was calling my name. Lunch was a tofurky sandwich on the new thin buns. I REALLY like the thin buns. 100 calories and multi-grain to boot! I added a little hummus and a couple of tortilla chips ( I don’t think I’ve ever mentioned my love of tortilla chips hmmmm.. that could be a whole other post).

It’s almost time for my next workout today. Brian, Jason and Kristi are coming over to be tortured, I mean, workout with me. I haven’t decided what we will do. Maybe some yoga, maybe some Insanity. Just have to see what I feel like when they walk through the door.

home party and king arthur flour

Since I work for Beachbody and since I need to make some money, I decided to have a home party! I invited a few friends over and got busy planning for a great time sharing the Beachbody love! I cleaned, cooked and got beautified (as much as possible 🙂 ). Kristi, Jason, Denisa, Chase, Meredith, Brian and I had some amazingly good food! Spinach dip and Mary’s Gone Crackers ( I did share a few), bruschetta, and Cranberry Sunflower granola bars! We were stuffed and everyone wanted me to share the recipes!

The cranberry sunflower granola bars mix is from King Arthur Flour! These were a HUGE hit with everyone. They were so easy to make and I only had a few left over. This is probably a good thing for me!

I mixed up the granola bars, baked them and then let them cool and cut them into bars. It was so easy and extremely tasty!

King Arthur Flour also sent me some Whole Wheat Flour and it is top notch! I made some amazing corn bread and used the flour in it! Very tasty! King Arthur Flour has a wonderful website with all kinds of goodies for the cook in your life! Be sure to check them out for some great Christmas ideas!
